We had a “Community Cookout” in my neighbourhood today. It was a good excuse to see neighbours old and new, and sit out on a glorious sunny Virginia day and enjoy BBQ. Laura contributed a large salad, and I decided to make rhubarb crumble. I’m not sure why I made crumble, but I’m glad I did because it went down a storm with vanilla ice-cream. I used a simple recipe; rhubarb, apple, plain flour, butter, caster sugar, and lemon juice. Preparation and cooking took about an hour, and it looked a bit like this:
- The layering went better in the righthand dish
- Ready to be devoured
- It proved to be popular
