It has been another Tuesday here in the US of A, and so to celebrate our survival of it Laura decided to cook a sumptuous feast in the form of some catfish. Southern cooking, in the US sense, is a delicious combination of flavours and without the help of any pre-mixed sauces Laura wrangled a heady group of fresh ingredients (and a hint of chilli powder) into a Cajun Catfish supper with corn bread and mashed sweet potato, garnished with a subtle but zesty tomato and cilantro salsa. The side dish of artichoke with a butter and lemon sauce was an ideal companion with the rich butter offsetting the tangy zing of the seasoning on the fish.
Add to that some gentle music and fine conversation and it really was the most wonderful end to what had been a busy day at the office for both of us! Thanks love!
